[Pref. en- (Gr. 'en in) + Gr. zy`mh
leaven.] (Physiol. Chem.) An unorganized or unformed
ferment, in distinction from an organized or living ferment; a
soluble, or chemical, ferment. Ptyalin, pepsin, diastase, and rennet
are good examples of enzymes.
